flourless peanut butter chocolate chip cookies -- gluten free + dairy free

score! my peanut butter chocolate chip cookies came out of the oven wonderfully! (plus i got the chance to take a hundred pics of them with a loaner 50mm 1.4d nikkor lens...i totally intend on purchasing my own next paycheck).

i whipped up 3 dozen of these bad-boys first thing today so they would have the entire day to set. simple, simple recipe. chances are, you already have all of these ingredients sitting in your pantry:
peanut butter chocolate chip cookies
  • 1 c creamy peanut butter (sans hydrogenated oils, sugar)
  • 3/4 unrefined cane sugar
  • 1/4 tsp sea salt
  • 1/2 tsp baking soda or 1/4 tsp for a flatter, less puffy cookie
  • 1 egg - lightly beaten
  • 3/4 c chocolate chips (gluten & dairy free, preferably)
preheat oven to 350 degrees. place oven cooking racks at middle and top shelf of oven. mix everything (minus choco chips) together in bowl - then stir in choco chips until incorporated. wet hands and form 1 TBSP sized dollops - divide between two cookie sheets - space cookies about 2 inches apart. place one cookie sheet on each rack in the oven. cook for a total of 10-12 minutes rotating sheets top to bottom & front to back 1/2 way thru. keep an eye on these guys - especially at high altitude. cooking time may vary depending on humidity and oven. trust me - these arent great when theyre burned.

soooo...tomorrow morning i've got another gluten/dairy free cookie to whip together before super bowl. look for my next posting either late sunday or sometime monday to find out what everyone thought of them (and if they could tell that they are gluten/diary free).


  1. I'm going to def try this one Katie. If you want to get them to lay a bit flatter and still stay soft brush them with a bit of water before you put them in the oven. I can get them almost as good as the ones from the lunchroom at Nashoba (remember those? Mmmm).

    My old co-worker had a sister in law that had a gluten free bakery in Ayer, but I think she closed it. Don't know what's out that way but might be a business direction for you.
