chocolate walnut (or pecan) brownie cookies -- gluten free + dairy free

i couldnt help myself - i planned to wait until tonight/tomorrow to post another blog, but here i am again. what can i say? i'm impatient.

i woke sporting a nice tequila headache. went to hacienda colorado last night for a birthday celebration and ordered a behemoth margarita and a gluten/diary/corn free chicken fajita platter. food and company was fabulous. to top it off i got to see my friends 'save the date' magnet  for their wedding this july - which included engagement photos a la katie. i'll blog about the pics later...for now, back to business...

again, i got up this morning -head pounding- and went straight to baking. this time, i put together gluten free, dairy free chocolate walnut brownie cookies. crusty on the outside, brownie like on the inside. it really doesnt get any better than this.

when i told you a few posts ago that i have food allergies i didnt mention corn. for those of you with a corn allergy - i have a bit of insider info. whole foods has their own 365 brand confectioners sugar made with tapioca starch, most brands use corn starch to prevent clumping. i've not seen this ANYWHERE else. JOY! i can finally bake AND make frosting again with confectioners sugar again!!!

chocolate walnut brownie cookies
  • 3 c confectioners sugar
  • 3/4 c cocoa powder
  • 1/2 tsp kosher salt
  • 1.5 c semi sweet choco chips roughly chopped
  • 1.5 c walnuts or pecans roughly chopped (i've tried both - walnuts will save you some $$$)
  • 4 large egg whites room temperature
whisk together confectioners sugar, cocoa powder & kosher salt. stir in choco chips & nuts. add egg whites and stir until just combined - do not over mix. drop 1/4c heaps onto a parchment lined baking sheet. bake in center oven 20-25 minutes at 325, rotating 1/2 way thru. remove cookie sheet from oven and place on cooling rack - cool completely before removing cookies from parchment. this recipe makes around 12 large cookies.

next time i make these i plan on substituting 3/4 c of the choco chips with dried fruit - most likely cherries.

  2. These are so darn good. They are gooey in the middle. I've been waiting to make them with the kids I nanny. I also think walnuts are better than pecans for this, but one of us should give a try anyhow. Maybe I will since we have 2 bags!

  3. just made these...with chopped peanuts as it was all I had on hand for nuts. I thought I'd have to cook them less, but 25 mins @325 was perfect!(I do live at a lower elevation) they are gooey on the outside, crunchy on the inside and delicious! I did have about 15 cookies from a batch using my large pampered chef cookie scoop. They were not flat, but thicker, this could also be do to the elevation or the silicone cookie sheet I used.

    But FABULOUS none the less!

  4. I made these last night and they are probably the best cookie that I've ever had. My mother immediately asked me for the recipe, not knowing she was not supposed to have any!!!!
